It is impossible to put a number that has any meaning as to the number of Old Testament authors. Things have changed with the times. The tradition that Moses wrote the first five Books is no longer held by modern historians. Most of the Prophets are the work of schools of men who studied the words of the famous man and published the Book in beautiful poetry. Isaiah was apparently studied for four hundred years and has three major authors (I, II, and III Isaiah) and more than 10 editors. The most prolific and influential of the Old Testament authors was Ezra the Scribe, writing around 450 BC. He is generally acknowledged to have written the Books of Ezra, Nehemiah, and both I %26amp; II Chronicles. In addittion, Ezra is accepted as "The Chronicler", the name historians use to identify the major editor of the Old Testament. Using the modern techniques we have become accustomed to seeing used by forensic science, The Chronicler's hand has been identified in every Book that existed in Ezra's time. Among his "contributions" the concept of heaven and hell, angels, and the idea that Satan is an opponent of God.
To answer your question concerning sources for this information, I must admit that it was not easy to come by, since most of it I found before the proliferation of websites that are available today.
Reading a commentary on any of the Books is an excellent place to find information about a Book that is not found in the Book. Where and when a Book was written and the author's identity are usually discussed in a good commentary, and then verse by verse the Book is discussed and examined. It is not unusual for the author of a commentary to have studied a single Book most of his lifetime and for him to be the head of a religious studies institution. There are no atheist authors of commentaries I am aware of.
As for the New Testament, whose authors invited speculation about their identity by using "anonymous" and then dropping subtle clues, let me say only that the Books whose authenticity has been questioned from the earliest of times are going to have to be looked at a little closer..Ireanus, around 180 AD expressed doubts about Revelations, the Gospel of John, the Book of James and some of Paul's Epistles. There are some disputes about books like "Hebrews" because it is written in Paul's Style but not with his normal greeting at the beginning.
